If you walk through our facility, you will see containers situated in numerous locations in an effort to contain cardboard, paper, metal, plastic, aluminum cans, flexible plastic, wooden pallets, plastic containers, and wire. Our goal: ZERO goes to the City Dump!

Food Safety and Quality Audit

On December 7, 2017, Capistrano’s Bakery LLC was inspected by the American Institute of Baking, representing Costco Wholesale. The day long inspection covered all areas of the property and processes within Capistrano’s Bakery. This included Management Systems, Food Safety Systems, Quality Systems, Grounds, Building and Equipment, Pest Control, Employee Practices, Receiving, Storage and Shipping Systems, Production Processing, Sanitation and Food Defense. The 98.9 rating score represents an Assessment Rating System. The rating system describes a food plant’s level of compliance with recognized food safety and Good Manufacturing Practices. The point system and defined regulations are objective guidelines used for evaluating a plant’s compliance with the assessed standards and are intended to assure rating consistency in the industry. Food safety at Capistrano’s Bakery is Priority # 1 and our entire team is very proud to have earned this very high rating.

The word kosher means proper or acceptable, and it has informally entered the English language with that meaning. But kosher laws have their origin in the Bible, and are detailed in the Talmud and the other codes of Jewish traditions. They have been applied through the centuries to ever-changing situations, and these rulings, both ancient and modern, govern OU kosher certification. All of our Bread loaves are kosher.
